By Ross Scott-Riddell, Family Owner and Head Chef
To feel like eating at home away from home, to have generously sized portions which taste first world, in an atmosphere of peace and tranquility, is what Pamarah Lodge manages to achieve every night in their daily set menu. Each day of the week presents guests with a different three course menu (with vegetarian and vegan options available), uniquely chosen and designed by the head chef to ensure that the ingredients are seasonal and locally sourced.
Upon arrival at Pamarah, you will be met by friendly staff who will be at your service the entire evening. An array of cocktails and mocktails (aeronautically themed to match the décor of the lodge) as well as various other drinks are on offer to be had table side or by the pool seating area, dimly lit with blue lights to set a lively vibe but relaxed mood.
Due to the booking cut-off time of 14:00, the chefs know exactly how many people will be joining them for dinner, and as such we are proud of our low-wastage system in which we prepare our food. Each ingredient is used to its fullest potential, thanks to the expertise and knowledge of the head chef who has international experience cooking at some of the highest levels. You are assured that each course put before you was carefully thought out and care put into every step of the cooking process.
Pamarah at night has a wonderfully calm and tranquil atmosphere, and is completely transformed from its daytime appearance by subtle garden and pool lighting and comfortable outdoor seating. Due to the quiet neighbourhood in which Pamarah is located, it is not uncommon to hear an array of evening and night birds and a cacophony of insects. Guests who stay at Pamarah and dine at Pamarah are often reluctant to retire early, and are very happy to soak in all we have to offer.
Close your eyes and imagine – sat by the pool in a snug, locally made hanging basket chair, sipping on an ice cold drink of your choice bursting with flavour, listening to the night sounds or talking and laughing joyfully with friends or family; then being led by your waitron to a lamp lit table which has been beautifully laid out; and finally being served a meal that makes you feel at home with every bite. That is our goal. To make our home, our Pamarah – your home.
